Mother’s Birthday Cake!

We celebrated my mom’s birthday this past Saturday at a Chinese restaurant in Chinatown.  I made this cake for my mom because she loves the beach, aquariums, and sea creatures. My mom is a fan of light cakes that aren’t too dense. April seems like a refreshing month where the birds are chirping and the trees are starting to look more lively.  We can start to ditch our jackets already… well, kind of. Maybe not today since the weather is so unpredictable these days.  So I made a lemon cake with strawberries and cream filling in between layers, covered with mousseline buttercream. Just seems like a time for something refreshing and my mom loved it. Yay! Thank you Joe for dinner and putting a smile on my mom’s face!
