Eclairs
Eclairs were never good to my tasting, but I'm surprised at how good these were. Maybe it's fresh, but I even popped them in the freezer when I got home to experiment and it was still good. The cream on the inside was just like ice cream after freezing them.
I made three different flavors for the cream filling; vanilla, coffee, and chocolate. Then I coated them with the fondant that matched their flavor also.

- pate a choux
- heavy cream
- creme patissiere
- fondant
My fav was the... um... all three flavors.
