Ingredients Crust 1/2 cup flour (I used 'almond flour') 3/4 cup whole wheat flour plus more for rolling (I used 'Spelt flour') 1/2 tsp salt (I used himalayan pink salt) 1/2 tsp baking powder 1 Tbsp maple syrup 3 Tbsp soymilk 1/2 tsp lemon juice 1-3 Tbsp water + more if needed Filling 2 cups canned pumpkin 1 cup soymilk 3/4 cup sugar (I used 'date sugar') 1/2 Tbsp dark molasses to taste 1/4 cup cornstarch (I used 'arrow root starch') 1 tsp pure vanilla extract 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp nutmeg, freshly grated (i just used ground nutmeg) 1/4 tsp ground allspice dash cloves (optional) 1/2 tsp salt (himalayan pink) Directions Crust: combine all the dry ingredients and wet ingredients in two separate bowls.
